Title: Dijon Chicken Salad

Yield: 3 Servings

1cLow-sodium chicken broth
1pk(4-serving size) JELL-O Brand Lemon Flavor Sugar- Free Gela
3/4cCold water
1tbVinegar
1/4tsBlack pepper
1/4cPlain lowfat yogurt
2tbReduced-calorie sour cream
1tbDijon-style mustard
1cFinely chopped cooked chicken breast
1cFinely chopped celery
1/2cChopped green or red pepper

Bring chicken broth to a boil in small saucepan. Completely dissolve gelatin in boiling broth. Add water, vinegar and black pepper. Chill until slightly thickened. Stir in yogurt, reduced-calorie sour cream and mustard. Chill until slightly thickened. Stir in remaining ingredients. Spoon into 3 individual plastic containers (for brown-bagging) or serving dishes. Chill until firm, about 2 hours. Makes 3 1/4 cups or 3 entree servings.
